For years, Brussels sprouts were known as the vegetable many people loved to hate. They were often remembered as “soft, bitter, and strangely sulfurous,” especially when they were boiled for too long. But the vegetable has made a comeback, largely because cooks discovered that **how Brussels sprouts are cooked makes a huge difference**.

Brussels sprouts naturally contain sulfur-containing compounds called glucosinolates, which contribute to their bitter taste and strong aroma. Overcooking can make these qualities much more noticeable while also creating a mushy texture. So, for many people, their childhood dislike may have been caused more by the cooking method than the vegetable itself.

Today, roasting is one of the easiest ways to transform Brussels sprouts. Cut them in half, toss them with olive oil, salt, and black pepper, then spread them in a single layer on a baking sheet. Roast at about 400°F (200°C) for 20–30 minutes, giving them enough space to brown instead of steam. The result should be **tender inside, browned and crisp outside**. A squeeze of lemon can add brightness, while Parmesan, balsamic glaze, garlic, herbs, bacon, or a little maple syrup can add even more flavor.

Brussels sprouts are also nutritious, providing fiber, vitamin C, vitamin K, folate, and other plant compounds. However, like other cruciferous vegetables, they may cause gas or bloating in some people, especially in large portions. They can also be eaten raw when thinly sliced for salads and slaws.

The biggest lesson is simple: **don’t overcook them**. If your only experience was with gray, mushy Brussels sprouts, it may be worth trying them again. Roast them hot, give them room, let the edges brown, and add your favorite finishing flavors. You may discover that the vegetable you thought you hated was never really the problem—it **“just needed a better recipe.”**
